Eton Mess is a wonderful thing. Cream, meringue, strawberries, omnomnomnom. It is really the perfect dessert.
I’ve made up a super speedy, super easy, super yummy Eton Mess recipe that’s also low in sugar and calories. Lovely. If you’ve ever want something late at night, this is perfect. You’ll be eating it within five minutes, and it’ll more than satisfy a sugar craving.
I came up with this at the end of last week and we’ve had it five times since then. Seriously. It’s good.
- Three mini meringues (I like ASDA’s “Extra Special” range)
- A handful of strawberries/raspberries
- Artificial sweetener
- A vanilla yogurt (Activia Snack Pots work best, as they’re so thick)
- A wine glass
Slice the stalks off the strawberries and quarter them. Put them in a bowl, sprinkle a good amount of sweetener over the top, and crush the meringues over the top of that. Then mix it all together really well.
Fill your wine glass about a quarter full with the strawberry mix.
Then add enough of the vanilla yogurt to cover the top of the strawberries.
Then pile on the rest of the strawberries, and top with more of the yogurt. You want to use about half of the yogurt in total. Top with a few more sliced strawberries, and a teaspoon of choco balls if you lik
The second time I made this, after mixing the crushed meringue with the strawberries I poured half the pot of yogurt into the bowl and stirred until the yogurt started to be tinged with pink. I then crushed a “fun size” bag of Maltesers and alternated layers of strawberry-meringue-yogurt with crushed Maltesers, topping with a few crushed pieces of chocolate. That was amazing.
It may not look as pretty, but it was a genuine party in my mouth. Utterly delicious.
I’m going to experiment with raspberries and cherries. But the basic formula of sweet fruit, meringue, yogurt and some form of chocolate appears to be a winner. Any suggestions to fruits I could use will be appreciated. Nom!
