So…this isn’t a recipe post. It’s more a disaster post.
I had a taster evening, and decided to bring along a version of my falafel burgers. I wanted to make them bite sized so that they could easily be shared around.
Things started well. I put the ingredients in a food processor…
…and blended to a smooth paste.
I heated a frying pan, sprayed it well with Fry-Light, and dropped tablespoons of the mix into the pan.
After a minute or so I flipped them over, cooking them for a minute on both sides, so that they were a nice golden brown colour.
But…what I got was a big soggy mess.
I wanted the falafels to solidfy on the outside and go crispy. Instead, all that happened was they burnt on the outside and stayed pretty much raw on the inside.
I’m not sure why this was. Maybe it’s because I was trying to cook them quickly (I was late) and what they really need is a long cook over a low heat. Or maybe I should try and add an egg to the mix.
Do you have any suggestions for what I could do to make them crispy? Or at least not soggy?
