Hunter's Chicken
I am a really big fan of Hunter’s Chicken. There’s BBQ Sauce, there’s chicken, there’s bacon, there’s cheese…what’s not to like? This recipe is one I’ve made up myself. I’m rather proud of it, because it was lush.

I had absolutely no idea if it was going to work but it went down a storm with my family and boyfriend when they tried it, so I’m counting it as a win! It’s another one of those great recipes that doesn’t taste likes it’s Slimming World friendly, even though it is. On we go!

Start by making the BBQ Sauce. I say BBQ sauce, it doesn’t taste exactly like BBQ sauce…but it is very nice.

Peel and finely chop the shallots. Put them in a frying pan, sprinkle the chilli powder over the top and fry them for about six minutes until they’re soft. I used a whole teaspoon of chilli powder and the result was too hot for my Mum and boyfriend; if you don’t like your food hot, then half a teaspoon is enough. Once the shallots have softened just add the rest of the ingredients and stir.  Keep the sauce on a medium to high heat and stir it occasionally — it should thicken up nicely.


Whilst it’s thickening up, you can make a start on the chicken. Pre-heat the oven to about 210C. Spray a roasting tin/baking tray with Fry Light and lay the chicken breasts in them. Then slit the breast down the middle, like so.


When the sauce is ready, spread it in the slits and over the top of the breasts. It really doesn’t matter if it’s neat or in fact how it looks at all; it’s going to be covered up with bacon and cheese anyway.


Then take the bacon and either wrap it round the breast or lay it over the top. If you’re slimming remove the fat, if not, you don’t have to bother (The two on the right are the ones Mum and I had)


Then pop the chicken in the oven for about 15-20 minutes, until it looks like this:


Sprinkle an ounce of the cheese over the top of the breast and put back into the oven. You need to bake it for about another 10 minutes or so — until the cheese has fully melted and darkened as much as you want it to.


Then you just need to serve it with the vegetables and/or salad of your choice, and it’s done!


Mmmmm. There’s a couple more photos here. I was really, really pleased with this recipe; it is fairly quick, really really easy and very filling. And it tastes good, which is always nice.

To make the BBQ Sauce
  1. 3 shallots

  3. Half a carton of passata — about 250ml
  4. 4 tablespoons of balsamic vinegar
  5. A good shake of Lea and Perrins
  6. 4 tablespoons of artificial sweetener
To make the chicken
  1. The above BBQ sauce
  2. 4 chicken breasts
  3. 8 slices of bacon
  4. 112g cheddar
  5. Green veg, to serve

    Hi! Going to make this tonight – we don’t like chilli – will there be enough flavour without it or can you suggest a substitute? (we’re wimps so nothing spicy haha) x

      Frankie – I would add more paprika. I am a chilli wimp, too, and whenever I want the lovely smokey flavours of chilli without the “Argh, that hurts!”, I add lots of paprika. A little extra balsamic and/or Worcestershire Sauce won’t hurt, either x

        I cant find the Worcester sauce in the recipe, but can see the photo! your idea about paprika sounds like a good idea. I have changed things around a bit and have found that a red onion has worked instead of shallots and chopped toms for passata. I usually stick to recipes to the letter the first time. Just add more balsamic and Worcester as you say.

    was looking for something quick and tasty, this looked good. Cheated a bit with the passata as don’t carry that in my store cupboard, I used a tin of chopped tomatoes and made the passata from there which is what I do also when I am making pizzas, it all turned out honky-dory. Many thanks.

    Hi Amy,
    I just needed to let you know that I tried your Hunter’s Chicken recipe, and it was so delicious that I had to leave a comment. After being a bit fed up with food after Christmas, I asked my son what he wanted me to cook for dinner. He said Hunter’s Chicken. I thought “OH NO”, I had this once in a pub and it was very dry and un-appetising and I would never Order it again. Any way, I searched the Web and your recipe was the first I came across, so thought I would give it a try. I followed the recipe to the letter but used balsamic glaze instead of balsamic vinegar because that it what I had in the cupboard and I used twice the amount of passata (I like lots of sauce). It was so good I am going to cook it for my friends when I next have a dinner party, because you can take it straight from the oven and just serve. Love, love, love it. I have also Book Marked some more of your recipes to try, they sound delicious and who knows I may even loose some weight too.

    Just thought I’d drop you a line to say thank you for the Hunters Chicken recipe. It was absolutely fabulous. I had 6 for dinner on Sunday and I nearly always have one who isn’t happy. Well I can honestly say all plates were clean and not an unhappy word spoken. We all thoroughly enjoyed it. I will certainly be trying some of your other recipes. So impressive yet so simple.
