But wow, did it work.
It worked good.
- 500g potato
- 1 large onion
- 2 peppers of mixed colours (I used red and green)
- 4 cod fillets
- 2 garlic cloves
- 1 lemon
- 1 red chilli
- A handful of fresh parsley
Preheat the oven to 200C. Slice the potatoes and the onion, scatter in a roasting tin and spray well with Fry Light. Bake in the oven for 15 minutes.
Whilst they’re baking, whizz the peeled garlic and parsley together in a food processor. Then slice the lemon, deseed and slice the chilli and cut the peppers into chunks.
When the potatoes come out, lay the four fillets of cod on top of them. Top them with the parsley and garlic mix.
Then sprinkle over the chilli, top with the lemon slices and scatter the pepper chunks around the fillet.
They look quite pretty, don’t they?
Anyway. Cook for 15 minutes, until they look something like this.
Then you just have to divide up into portions, serving with salad if you like.
Mmmm. Gorgeous! And so very simple.
