I know I need to eat fish, but I hate the taste of it. I am, therefore, on a constant mission to find ways to disguise the taste and smell. This recipe worked a treat. My Mum actually said it was something that I could make again whenever I liked because it was so delicious. BUT even more importantly, I liked it and it totally disguised the horrid fishy taste and smell. Lovely.
- 4 cod fillets
- Juice of a lemon
- 900g potatoes
- 57g breadcrumbs (or bread)
- 2 eggs
Place your cod fillets in a bowl and squeeze the lemon juice all over them. Turn them over a few times so they’re well coated in the juice, and leave for an hour so the juice can really sink in.
Then put a baking tray in the oven, preheat the oven to 200C and start making the chips. You can peel the potatoes, but I don’t bother doing this because they taste just as nice with the skin on and it’s that extra bit of fibre; just slice them into chip like shapes.
Then boil them for five minutes, drain well, stick them back in the pan with the lid on and shake to rough them up. Take the baking tray out of the oven, spray it with Fry Light, tip the potatoes on the tray, spray them with Fry Light and stick in the oven.
You’ve now got ten minutes to get your fish ready before they need to go in the oven too. If you don’t have breadcrumbs, you can easily make them. Get 57g bread (I used Weight Watchers malted loaf — it was about two and a half slices) and whizz it in a blender or food processor until they’re breadcrumbs.
Then get two wide, shallowish dishes. In one tip the breadcrumbs and a sprinkling of black pepper. In the other tip in your beaten eggs. Then spray a roasting tray/baking tray with Fry Light and have it nearby.
It’s just a case of dipping both sides of the cod fillets in the egg, coating it well….

…and then placing the coated fillets on the baking tray.
When the potatoes have been in for 10 minutes, stick the cod fillets in too. They need to be baked for another 15-20 minutes. I put some green veg on to cook too, to serve it with. When it’s done put everything on a plate together, squeeze a little bit more lemon over the top of the fish and voila.
Seriously yummy. Just looking at the pictures and remembering it is making me hungry; it was so lovely. Lovelier, dare I say, than battered fish from the chippy — and much healthier!
