It was Mother’s Day last week, and I wanted to make some nice things for my wonderful mother. This recipe is adapted from the one on the Slimming World website, and it was lovely.
It’s 5.5 Syns and quite small, but you can beef it up with more fruit and extra light whipped cream. As we did. If having a dinner party I would triple the amount of pastry and make them much bigger with much more fruit inside. Mmmmm. I bet they’d be utterly gorgeous
- 100g/3½oz puff pastry
- 100g/3½oz fat free natural fromage frais
- 57g/2oz quark
- 2 tbsp artificial sweetener
- 11g Options Belgian Hot Chocolate
- 340g/12oz mixed berries
Preheat your oven to 220C and prepare your pastry. You can make your own pastry if you want but I didn’t bother and just bought some Jus Roll from the supermarket. I then measured out four 25g chunks of it.
I then rolled it out so it was about a 4-5 inch square. It stuck to the rolling pin and the surface quite a lot; you may need to use a very, very fine dusting of icing sugar.
I then used a cutter to cut out a heart shape. The cutter was slightly too small so I used it as a guide and cut around it to make a bigger heart but if your cutter is the right size, use it to cut out and then score another heart inside the original one. It should look a bit like this.
When they’re all ready, put them on a baking tray lined with either baking parchment or foil and bake them in your preheated oven for 12-15 minutes. The pastry should be risen and golden.
Whilst they’re baking/cooling, slice up your fruit. You can use whatever fruit you want and obviously the more the better…
When the hearts are cool, poke out the middle so you get a little case.
Then mix together your fromage frais and Quark. The original recipe says to flavour this mix with rose water; instead I used an Options sachet to make it nice and chocolatey.
Fill the heart with this mix…
And then lay your sliced fruit on top. Done.
